The Garden Lounge at Tanah Merah Country Club set the stage for an evening of quiet sophistication on Wednesday, 8 April 2026, as 28 Members gathered for the latest edition of the Gourmet Food & Wine Pairing Experience: An Exquisite Evening with the Chancellor of the Jurade de Saint-Émilion.
Regarded as one of the Club’s most sought-after events, the session was fully subscribed within just days of its release, reflecting the strong appetite among Members for distinctive and thoughtfully curated experiences.
The setting lent itself naturally to the occasion. Warm lighting, elegant surrounds and a convivial atmosphere created the perfect environment for an evening centred on appreciation, conversation and discovery. The format remained intentionally intimate, allowing Members to engage freely while enjoying each course and pour at a comfortable pace.
The evening was hosted by TMCC General Committee Member Mel Choo, Chancellor of the Jurade de Saint-Émilion in Singapore. Through a carefully prepared PowerPoint presentation, he shared insights into the history and traditions of the Jurade, offering context to the wines and a deeper understanding of the heritage behind Saint-Émilion. His presentation was clear, engaging and informative, adding a meaningful layer to the tasting experience.
A selection of Saint-Émilion wines was paired with a multi-course menu that drew on Western culinary techniques with subtle Asian influences. The progression of dishes included Boston Lobster with Caviar, Braised Shark’s Fin with Crab Meat in Golden Broth, Pan Seared Steak with Black Pepper and Korean Kimchi, Charcoal Roasted London Duck and Kurobuta Char Siew with XO Sauce and Mee Pok. The evening concluded with Chilled Red Bean accompanied by Coconut Ice Cream. Each course was thoughtfully matched to bring out the character and balance of the wines.
The evening came together with a sense of ease and refinement. It was an occasion that combined good wine, well-considered food and engaging company, leaving Members with an experience that was both enjoyable and memorable.
